Recipe: Pulled Brisket Burger

Serves 4

Ingredients

1kg Beef Brisket
2 Large Brown Onions
3 Cloves Garlic
2 tsp Olive Oil
500ml Beef Stock
1/3 cup BBQ Sauce

Dry Rub
3 tbsp Brown Sugar
1 tbsp Smokey Paprika
3 tbsp Dried Shallots
Black Pepper
Sea Salt

To Serve
4 White or Brioche Buns
Dill Pickles
Red Onion
BBQ Sauce

Sweet Potato Chips
350g Sweet Potato
Olive oil

METHOD

  1. Combine all dry rub ingredients in a mortar and pestle and rub all over the brisket.  Place brisket in a bowl, cover and place in the fridge for at least 2 hrs or preferably overnight.  Remove from the fridge and bring to room temperature when you are ready to cook.
  2. Preheat oven to 170°C.  Heat a heavy bottom roasting dish on the cook top add some oil and brown the brisket all over for a couple of minutes to seal the meat.  Remove from the dish and set aside.
  3. Add the onions and garlic and more oil if required and cook for about 8 minutes until onions are soft.  Return the meat to the dish and add the stock and BBQ sauce.  Cover and place in the oven for 3 hrs
  4. While the meat is resting peel the sweet potato and slice very finely into rounds.  Toss in olive oil and sea salt and place in a single layer on a baking tray and into the oven for 10 -12 minutes at 200°C
  5. Shred the beef and assemble the burger with finely sliced red onion, pickles and bbq sauce.  Serve with a side of sweet potato chips
